Lenten Meatless Meals: Mexican Mashed Potatoes

Many people who celebrate Lent, go meatless on Fridays. I thought it might be fun to share some meal planning ideas & recipes that could make those Friday dinners more interesting for the whole family.

I encourage comfort food meals. Because during the Lenten season, it can be all too easy to focus on what you're giving up. Why not add comfort?

Today's meal idea is Mexican Mashed Potatoes. Um, yes! :)

Although I have to admit that for anything spicy, my tummy tries to say no, what could be more comforting than mashed potatoes? But my son gets bored pretty quickly with mashed potato meals, so this might be just the thing he'll like.

Edited to add: an interesting thing has happened in the comments. Almost everyone, so far, has responded as if I am suggesting that they make mashed potatoes a part of their regular diet.

Now, I don't have a dog in the fight about whether or not mashed potatoes are good for you or not. But I do want to clarify that that was not my suggestion.

I recommended comfort food for Friday meals during Lent, and I think there are six Fridays altogether? So Mexican Mashed Potatoes could be one of those six meals.

I wasn't recommending a permanent change to anyone's diet, and I am not trying to weigh in on what is healthy and what is not.

So, my menu is meatless about 5 days a week- but never, ever would a potato venture across my threshold- let along a dish.
Happy lenten season to you- graduate to yams. They're much better (tasting and for you).

When I read your title, I read it as Lentil Meatless Meals... I thought I would be reading a bean recipe :-)

I am going to try this anyway. Although, I am with Roy and his comment - Sweet Potatoes / Yams.. mmmm How can you go wrong with something you can put sugar and cinnamon on??

Paul, I completely agree! How an you go wrong with yummy sweet potatoes. Thanks goodness, I can have both. Sorry, it wasn't lentils, though I must say, I am not fond of them.

Before I started my healthy eating plan, I lived on potatoes! Now I go more for yams or sweet potatoes. I also like faux mashed potatoes make from cauliflower!

I was raised on a farm and we raised our chickens, hogs, beef cows and milk cows so I grew up on a meat and potatoes diet. But I understand that moderation in everything is the key. I will try your recipes because I will try to get out of my old habits.

Oh, interesting! Well, my suggestion is for maybe one or two Fridays in the Lenten season, not as a permanent change to your regular diet. So just a way to add one comfort meal meal for Lent.

Here in India we are having a nine days fast right now. Most of us who fast eat potatoes but without oinions. This is a great recipe and shall definately try it out.
